A five-course dinner, signature cocktails and the unmistakable spirit of The Dead Rabbit are coming to Dublin this September. The collaboration is set to be a standout moment for food Ireland fans, bringing together chef Mark Moriarty, New York’s celebrated bar and Glendalough Distillery.
Mark Moriarty Studio welcomes The Dead Rabbit to Dublin
Mark Moriarty will host The Dead Rabbit at his newly opened studio in Wilton Park for three intimate evenings from 22 to 24 September 2026. It will be the first major collaboration staged at Mark Moriarty Studio, creating an exciting new entry in the Ireland food guide and Dublin dining guide.
The Dead Rabbit is renowned internationally for its Irish-inspired hospitality, live music, cocktails and Irish Coffee. The New York bar has also poured more than 250,000 pints of Guinness annually, helping establish its reputation as one of the world’s most recognisable Irish bars abroad.
Moriarty became chef partner with The Dead Rabbit in 2024. His Dublin event will continue the relationship through a five-course menu paired with five of the bar’s signature cocktails, with Glendalough Distillery joining as the pouring partner.
A celebration of modern Irish food and drink
The collaboration reflects the increasingly ambitious Irish food scene, where chefs, distillers and bartenders are working together to reinterpret Irish cuisine. Rather than focusing only on traditional Irish food, the event will explore contemporary flavour, craft and presentation while maintaining a strong connection to Ireland’s culinary identity.

Mark Moriarty described the collaboration as an ideal way to launch his new studio, praising The Dead Rabbit team and its drinks programme. The bar’s founder, Jack McGarry, has twice been named World’s Best Bar at the Tales of the Cocktail Spirited Awards and said the team is looking forward to bringing its Chef Series to Ireland after two successful years in New York.
