How Skipping a Girls’ Trip Helped Laura McCarthy Build Drink Botanicals

A cocktail fusion kit, a hot glue gun and a bold decision to skip a trip to Thailand became the unlikely ingredients behind one of Ireland’s most successful drinks businesses. Laura McCarthy transformed a simple idea spotted in a Dublin off-licence into Drink Botanicals, an international brand now reaching customers through major retailers including Walmart in the United States.

Her story offers an inspiring glimpse into food Ireland entrepreneurship, showing how a small product test, strong family support and the courage to act can create a global opportunity.

The Dublin idea behind Drink Botanicals

While studying at TU Dublin, McCarthy noticed that gin drinkers had plenty of choice when it came to spirits, but fewer options for making drinks more distinctive at home. A visit to Redmond’s of Ranelagh gave her the chance to test the concept with a local retailer.

She proposed a product that would help consumers enhance their drinks using botanicals and carefully selected ingredients. With encouragement from the off-licence owner, McCarthy contacted her cousin Aisling, a graphic designer, who helped turn the initial idea into a presentable prototype.

The first version was assembled at McCarthy’s kitchen table. She ordered small quantities of ingredients including juniper berries and hibiscus, then used a hot glue gun and stapler to create packaging that was ready for retail testing.

Her first delivery consisted of just 12 products. Within a week, they had sold out. That early response convinced McCarthy that her idea could become more than a college project.

A business decision instead of a holiday

McCarthy had planned to travel to Thailand with friends, but chose to stay focused on launching Drink Botanicals. Her decision was met with disbelief at first, yet the early retail success gave her the motivation to continue.

What began as a single gin fusion kit has since developed into a range of more than 70 products, including cocktail kits, gin fusion kits and natural-based syrups. The brand’s growth reflects the wider evolution of the food news Ireland landscape, where Irish founders are increasingly building products designed for both domestic and international customers.

From Irish shelves to Walmart

After establishing the business in Ireland, including placements in hospitality venues such as Ashford Castle, McCarthy looked to expand overseas. The United Kingdom was the first international market, with Drink Botanicals launching through Amazon before attracting distributor interest.

The company later entered the United States, where its products became a leading seller in its category for several consecutive years. Its expansion to Walmart’s US e-commerce platform marked another significant milestone for the Dublin-founded brand.

Drink Botanicals moved into a dedicated base at Crumlin Business Centre in Dublin 12 in 2023, reflecting the increased demand for its products. The company’s journey also earned McCarthy a place among the 24 finalists for the 2026 EY Entrepreneur Of The Year awards.

What entrepreneurs can learn from Laura McCarthy

  • Test the idea early: A small trial with a local retailer provided immediate evidence of customer demand.
  • Use available skills: McCarthy combined her product vision with her cousin’s design expertise.
  • Start practically: The first products were made with limited resources rather than a large manufacturing budget.
  • Think beyond the home market: Once the concept proved itself in Ireland, international expansion became a realistic next step.

Drink Botanicals’ success is a reminder that many strong Irish businesses begin with a simple observation and a willingness to act. From a kitchen-table prototype in Dublin to international retail shelves, McCarthy’s journey is a standout example of modern Irish food and drink entrepreneurship.

The clearest takeaway is simple: sometimes the decision that looks unconventional—such as skipping a holiday—can create the space needed to build something remarkable. Laura McCarthy’s story shows the power of spotting a gap, testing it quickly and committing fully to the opportunity.
